On Saturday, Karen Wood will deliver her gingerbread masterpiece to Einstein Bros. Bagels on the corner of Lincoln and Urbana University.
It’s the 12th year of the Champaign woman’s eye-pleasing vacation project, but it was in doubt until earlier this month. A series of serious family illnesses that continue to this day have made everything even more difficult.
“Since I’m late to start, it will be much smaller than the latest creations,” he said. But “this is my therapy and only semblance of ‘normality,'” she said
In years past, “Gingernana Karen” has made delightful replicas of everything from the Illini Union to the Allerton Mansion to Burnham Hospital. This year her turn is the Cattle Bank building in Champaign, which has been around since 1856.
This is not your average gingerbread house. Just making the dough required 6 cups of shortening, 6 cups of sugar, 6 cups of molasses, 12 eggs, and 28 cups of flour.
Created paper models on November 13th. Baking began last Tuesday and construction Thursday as it races to meet the deadline. He will remain on the counter at Einstein Bros. Bagels until Christmas.
“I love making gingerbread, so I haven’t given up yet,” she said.
